    Course Description

    In this course, students learn the foundations of baking and pastry arts.  Students will learn safety and sanitation practices in addition to the foundational techniques to bake breads, cakes, and pastries. 

    Students Will Learn: 

    • Safety and Sanitation 
    • Weights, Measures & Baker’s Math
    • Methodology of Mixing & Baking Methods
    • Production Efficiency & Cost Control
    • Breads, Doughs and Pastries
    • Decorative Techniques
    • Custards, Crèmes & Frozen Desserts
    • Chocolate Techniques
    • Multi-layer Tiered Cake Design, Production & Transportation 

     

    Career Opportunities:

    Upon completion of this course, students will be qualified to seek entry-level positions in baking and pastry arts. 

    Baking-related careers offer flexible hours and opportunities to work from home or at bakeries, restaurants, and resorts.  In addition to learning skills in the kitchen, students learn other professional skills such as creating resumes, building digital online portfolios (websites), business and money management and communication skills. PLEASE NOTE: This program is pending NYS program approval and is not yet approved as being able to offer academic credit.

    Course Length: 1 year

    Location: GC Tech

    Placement: Regular 

    Credits: Up to 4 CTE credits a year
